Monday munchies: Turkey and vegetable ragù

January is the start of busy season in the accountancy practice world, which means working late and wanting to do nothing but slob on the sofa when you finally do get home.  Cooking a healthy meal is often the last thing on my mind but this recipe ticks all the boxes - quick, easy and healthy.



Turkey and vegetable ragù
For 3 small bowls/2 large bowls

340g turkey mince (also works well with beef mince, but turkey mince is less than 3% fat)
1 white onion
1 courgette
4-5 mushrooms
1 clove of garlic
2 tins of chopped tomatoes (or 1 tin of tomatoes and 1 jar of ragù sauce)
1 tin of sweetcorn


Preheat a wok or frying pan with a drizzle of oil and then brown the turkey.


While the meat is browning, chop the vegetables.


Once browned, remove the turkey mince from the pan and set aside.  Add a little more oil then mushrooms, courgette and onion.


When the vegetables have softened, crush the garlic clove into the pan.  (Doing this before the vegetables have cooked will mean that the garlic will burn while the vegetables are cooked)


Add the sweetcorn and chopped tomatoes and stir well.  If you're using ragù, add this now too.


Add the turkey mince back to the pan and allow to simmer for 10-15 minutes.


Spoon into a bowl, head to the sofa and relax!  Carb free and delicious - trust me, you don't even miss the pasta.

Project 365: #144 Thai green curry


After indulging in a Chinese takeaway last night, a healthy stir fry seemed like a good way to go tonight!  No noodles, just mange tout, courgette, butternut squash, onions, spinach and bok choi chucked in a wok for five mins and some chicken cooked in a thai green curry sauce.  Not really much else to say about this, other than that it was delicious!

Project 365: #139 Breakfast


Before we left Donnington Valley (and went straight to work - boo!) we just had time for breakfast.  I'm not a big cooked breakfast fan anyway, although it did look good, but I decided I'd go for some fruit salad and toast.  Delicious, and just the way to kick start the post-Christmas, post-anniversary detox!

Project 365: #090 Homemade chicken pie


Would you believe that a slice of pie contains less than 400 calories?  This one does! (Find the recipe here)  I decided that since I was having a quiet Sunday, I'd cook dinner for everyone - aren't I nice? :)  A couple of hours in the kitchen later (with assistance from Danny!) and dinner was served!  It was delicious as well - I'll be making this again!

Project 365: #029 Water


I'm notorious with lots of my friends for never drinking enough.  I know I should drink more and when I really think about it, I do try to, but then I get distracted with other things and never think about it.  Danny is always telling me that the key to losing weight is to drink lots of cold water so I'm going to try and make a real effort to do so - I managed to drink 1.5 litres in three hours this afternoon!

Project 365: #027 Fruit salad

I'm trying to couple doing the Shred with eating healthily - I've been failing at the weekends but I had a very nice healthy lunch from M&S today - salmon and watercress salad followed by this delicious tropical fruit salad.  With normal fruit salad, I always find the apple a bit dry, but M&S have a huge range of different fruit salads - this one had pineapple, kiwi, papaya, mango and passion fruit.  Yum!
(PS.  M&S have not paid me to rave about their fruit salads!)
